Stew Chicken Recipe

What You’ll Need:

  • 3lbs Seasoned chicken
  • 2 tsp Finely grated ginger
  • 2 tsp Finely grated garlic
  • A handful of Sliced carrots
  • 1 Pimento pepper
  • 1 Cup Coconut milk
  • Goya-all purpose seasoning (blue top)
  • 1½  tbsps brown sugar
  • 2 tbsps vegetable oil
I seasoned my chicken using green seasoning, one medium roughly chopped onion, Angostura Bitters, Goya all-purpose seasoning (blue top), a pinch of cinnamon.
All seasoned up ready for the pot.
Garlic, ginger, carrots, and pimento.


  • Heat up an iron pan, adding in the oil, ginger, garlic and brown sugar. Wait until you see a caramel brown colour before adding the chicken.


  • Add in chicken, ensuring that all pieces are coated with the mixture. Lower heat and cook for about 5-7 minutes. Pic23
  • Add in remaining ingredients, lower heat and cover the pot, leaving the chicken to cook for about 20-30 minutes or until tender. If water runs out just add some water so the chicken will not stick.
  • Serve and enjoy. 
Served mines with some rice and lentil peas.
