Coconut Chicken Recipe

Welcome back readers and in today’s post I’ll be sharing with you a simple, yet tasty recipe for coconut chicken. 

Coconut Chicken

What You’ll Need: 

  • seasoned chicken (I used 3 pieces of chicken breasts)
  • 1 large egg
  • 3/4 shredded coconut
  • 1 tbsp. oil

Flour Mixture:

  • 1 cup flour
  • 1/4 cup cornmeal
  • 1 tsp. cinnamon powder
  • 1 tsp. chili powder
  • 3/4 tbsps. Goya seasoning (blue top)


  1. Preheat oven to 375°F.
  2. Rub oil on a baking dish. 
  3. Get three bowls: the first bowl combine all ingredients for flour mixture, the second bowl beat egg, final bowl place shredded coconut.
  4. Dip chicken in flour mixture, then egg and coconut.


   5. Bake in the oven for about 30 minutes, flipping sides halfway through cooking, until fully cooked. 

   6. Serve and enjoy. 

Coconut Chicken served with mashed sweet potatoes and veggies.
